While making a tasty cream cheese frosting or buttercream really isn’t all that difficult, sometimes I simply want to make an easy and delicious frosting recipe that doesn’t give me the big heave-ho over that I’ve-already-spent-too-much-time-in-the-kitchen cliff of death! Ever been there? You spend oodles of time on your cakes, cupcakes or cookies, but then the frosting is still waiting to be made! Glory be, sometimes it is simply too much! That’s where this method of ramping up store-bought frosting comes in handy-dandy.
For an easy buttercream frosting, simply use a tub of regular store-bought frosting (not whipped), add about 1/4 cup of confectioners sugar, and whip, whip, whip with an electric mixer or stand mixer. (I added red coloring gel here because I wanted my frosting to be a perrrrty pink.)
Continue adding confectioners sugar in small increments until a spatula will stand upright when placed in the middle of the frosting. If the spatula falls to the side, continue adding small amounts of confectioners sugar. Below you can see how my frosting fluffed up very nicely. Perfect for piping!
The consistency of this frosting holds its shape extremely well, plus it increases the volume of the frosting which allows you to have enough frosting to actually finish icing your cake or cupcakes without running out. Yes, I’ve encountered that. Many times. Too many times.
If you want to really ramp things up a bunch, add an 8 oz. block of softened cream cheese to a regular tub of frosting, again whipping with an electric mixer. As mentioned above, add additional confectioners sugar in small increments until a spatula stands upright when placed in the center of the bowl of frosting. Mmmm, cream cheese frosting!
Goodness to pete, this method makes whipping up a beautiful, creamy, and workable frosting as easy as pie!
