That’s what we’ve got today, boys and girls, and I don’t know about you, but every bit of that last sentence floats my boat!
Why, yes, yes, you did read the title to this post correctly: Reduced Fat Oreo Banana Bread. Indeed! See that pat of butter up above just there? Well, let’s just say that the reduced fat doesn’t come from the butter. But! The reduced fat version of Oreos used in this recipe sorta, kinda, if you squint hard enough, make up for that butter! I think we come out okay on this one, folks!
This wonderfully moist and delicious recipe makes enough dough to fill two large bread pans or several smaller bread pans as I show here. I figure that if I’m going to go to go through all of the effort to make banana bread, I want it to go a loooong way! Besides, those little loaves bake up to be just the perfect size for the cutest little gifts you’d ever wish to see.
I want you to pay special attention to the fact that my loaf pans are lined with waxed paper which has been sprayed with cooking spray. Whatever you do, DO NOT SKIP THIS STEP! Believe you me, you will regret it when it comes time to prying the living daylights out of those pans in an effort to release your bread. Those Oreo pieces stick somethin’ fierce!
Ahhh. See? The bread pops out of the pans so easily with the assistance of that sprayed waxed paper. Just do it.
Even with the reduced fat version of Oreos, this banana bread recipe delivers up a very moist and tender loaf with the bonus flavors of chocolate and cream from the cookies. Goodness to pete, how can one say no to that, I wonder!
Yup! A great little neighbor gift right there! Look at how cute these little loaves are. A teacher, a friend, a co-worker, even your big and burly brother-in-law would simply melt at your feet when presented with this sweet little treat. Trust me.
Adding a drizzle of powdered sugar glaze makes these tasty loaves totally legit. Like, boutique bakery legit. To keep this recipe quasi reduced fat, I opted to use milk in the glaze rather than heavy cream. But, I’ll just say that using heavy cream actually does do something magical to the powdered sugar, so do with that what you will.
Although ending up with too many loaves of this Reduced Fat Oreo Banana Bread on your hands is quite the fantasy, it is good to know that this bread freezes extremely well for up to three months when wrapped securely in aluminum foil. But, like I said, total fantasy to have too much of this good thing left over.
